Spicy Tomato Soup

Hot Pot of Soup!

A quick soup that loves to be paired with grilled cheese on a chilly winter day.


  • 1 tbsp. butter
  • 1 medium onion, chopped
  • 1 quart crushed tomatoes
  • 1 cup stock (I used turkey stock)
  • 1 cup whole milk (use half and half if you are feeling decadent, or plain greek yogurt if you are feeling healthy)
  • 1 tsp. salt
  • Scant 1/4 tsp. cayenne pepper

1. Melt butter in a soup pot and add onions.  Saute on medium until transleucent.

2. Add tomatoes and stock, and bring to a boil.

3. Puree with an immersion (stick) blender.  If you don’t already own one, as for one this holiday season!

4. Add milk, salt and cayenne, stirring to combine.  Serve with grilled cheese or homemade croutons.

Makes enough to serve 3 people, or 2 really hungry ones.

Grilled cheese with brie, arugula, goat cheese and sun-dried tomato spread- decadent!
