Final Harvest

Frost is on its way, so we finally dug up our beets!  The greens have already found their way into Turkey Meatball Soup, and the beets themselves are slated for some roasting this weekend.  As with all things that grow underground all season, these were very exciting to unearth!  We used a seed mix with different types, hence the varied colors of the stems.

Eggplants were a late addition to the garden; the seedlings were given to us over the summer.  We finally picked them (all three!) and will need to fry them up soon.  Not sure what happened there with the big yellow one, but hopefully it tastes ok…
